CULTIVATION METHOD
The entire estate is managed according to biodynamic principles: soil cultivation, no herbicides or other synthetic products, massal selections, cover cropping of vine rows, spraying of herbal teas and plant decoctions, agroforestry, and a non-mutilating vine pruning method.

VINIFICATION
Manual harvesting in crates from October 2 to 5, 2024, with two passes in each plot to pick only optimally ripe grapes. A significant selective sorting was carried out by hand in the vineyard to select optimally ripe grapes, followed by a second sorting at the press. Direct pressing of whole clusters, slow and gentle to extract the highest quality juice. Cold settling for 24 hours. Racking into 1 to 3-wine demi-muids at the start of alcoholic fermentation. Malolactic fermentation in barrels. After 10 months of aging, 100% in wood, this wine was bottled on July 19, 2025, on a fruit day.
TASTING
A striking white wine, featuring white fruits and citrus, with a tangy attack, an intense and mineral mid-palate offering a broad aromatic range, and a fresh, mineral finish underpinned by the noble and subtle bitterness of Roussanne.
